Easy FANCY Dinner….trust me!!
First I’ll give you the Maple Salmon Recipe….I had something similar at a local restuarant and was determined to duplicate it…and I did….it’s simple and will WOW any guest!!!!
This is for 2- 1.13 or so lb Fresh Salmon Fillets..adjust accordingly (sorry, I don’t like frozen salmon but suit yourself)
Ingredients: 1/2 c Maple Syrup
1/8 c lime juice
1/4 c Soy Sauce
2 T minced garlic
2 tsp Ginger spice (or you can use fresh ground ginger) honestly…can’t tell any difference
Place the fillets in your Crock pot, if you need to make more, you need a large crock pot…I made mine for two people and the average crock pot works, place them side by side, stacking them..umm, not good idea. I salt and fresh pepper them.

Now pour over glaze

Cook for one hour…
Make topping now…and I don’t use exact ingredients..sorry..melt some butter, maybe 3/4 stick, add some pecans, about 3TB brown sugar, and just enough flour to make it saucy….maybe around 1/4 c…sorry folks…this is how I cook….should look like this..

NOW…for the Spinach Feta Pinwheels..which you can start now.
1 pkg Pillsbury pie crust (comes with 2 crust, I make one for dinner, and wrap the other one, fridge and save for snack time tomorrow)
You need:
Pie crust
1 frozen small box chopped spinach
chopped feta cheese
Simple roll out the dough, spread on the spinach (drain it first in a paper towel) and sprinkle on the cheese, then roll up like a tube. Take a good bread knife and gentle slice…I put mine in a muffin tin (spray with pam) since they like to fall apart, ha..cut them thick enough to almost reach top of muffin tin….they take about 30 mins…so wait if you want them ready to serve with the Salmon, just cover and let them wait in the fridge.



Around 15 mins before Salmon is done….get a glass of wine..or a Martini, pop those babies in a hot oven….about 375..
Now….pull it all together…just when the pinwheels look almost ready (that means done but not quite golden yet)…very….very….very…gently lift the Salmon from the Crock pot..take your time, you have to be gentle with this…I place mine on my toaster over tray, covered with foil (but can do in oven)…spoon on the topping, pop in the oven, and broil until slightly bubbly (toaster oven, just press toast, love it) here’s before pic…

…..while that’s going on…the pinwheels should be about ready to take out. If they look golden, take them out!!! By the time you put them on a pretty plate, the Salmon will be ready… Place the Salmon in a dish and spoon crock pot sauce over top and sides….Oh my…your mouth is gonna dance dance dance and your man is gonna love love love you!!! For dinner guest, add a salad first…with crispy baked Parmesan rounds..which I’ll tell you about later, and you will wowie them. I promise!!! This may sound hard…but it is not!!!! Actually it’s amazingly simple for the restaurant quality your going to get….trust me on this one ya’ll…….And here they are….
